Production Process of Instant Porridge
 
1. Raw Material Preparation 
 
  • Ingredient Selection: High-quality grains (such as rice, millet, oats, etc.), dried fruits (like dates, raisins, goji berries), nuts (almonds, peanuts, walnuts), and seasonings (sugar, salt, spices) are carefully chosen. The grains should be free from impurities, pests, and have proper moisture content. The dried fruits and nuts need to be fresh and without mold or rancidity. For example, when making a mixed-grain instant porridge, a combination of different grains is selected to achieve a balanced nutritional profile and rich flavor.
  • Cleaning and Soaking: The selected grains are thoroughly washed to remove dirt and debris. Some grains, especially those with a harder texture like brown rice, may require soaking for a certain period to soften them and reduce cooking time. The soaking water is drained off before further processing.
 
2. Cooking 
 
  • Boiling: The cleaned and soaked grains are placed in a large cooking pot or specialized industrial cooker along with an appropriate amount of water. The water-grain ratio is crucial and is adjusted according to the desired consistency of the porridge. They are boiled under controlled temperature and time conditions. For instance, rice porridge might be boiled at around 95 - 100°C for 20 - 30 minutes until the grains are cooked through and the porridge reaches the right thickness.
  • Adding Ingredients: Once the base grains are cooked to a certain extent, the dried fruits, nuts, and seasonings are added. The dried fruits add natural sweetness and flavor, while the nuts provide a crunchy texture and extra nutrition. The seasonings enhance the overall taste, making the porridge more palatable. They are stirred well to ensure even distribution.
 
3. Homogenization 
 
  • Using Homogenizing Equipment: After the ingredients are combined, the porridge is transferred to a homogenizer. The homogenizer subjects the porridge to high pressure and shearing forces, breaking down any large particles or lumps and creating a more uniform texture. This process helps to improve the mouthfeel and stability of the porridge, ensuring that each spoonful has a consistent quality.
  • Adjusting Viscosity: During homogenization, the viscosity of the porridge can also be adjusted by adding thickeners or thinning agents as needed. This allows manufacturers to produce porridges with different thicknesses to meet various consumer preferences.
 
4. Packaging 
 
  • Filling: The homogenized and cooked instant porridge is filled into cups, bags, or cans. Automated filling machines ensure accurate and hygienic filling. For cups, they are usually made of heat-resistant materials and come with a sealed lid. For bags, they can be stand-up pouches or flat pouches, depending on the packaging design. The filling volume is precisely controlled to provide the right amount of porridge for a single serving.
  • Sealing: After filling, the containers are sealed immediately. For cups, heat-sealing is used to close the lid. For bags, it could be a combination of heat-sealing and zipper closures for easy opening and resealing. For cans, lids are screwed on tightly. Proper sealing is essential to prevent air and contaminants from entering and to maintain the freshness of the porridge.
  • Labeling: Labels with product information such as ingredients, nutritional facts, production date, expiration date, and preparation instructions are attached to the containers. The labels are designed to comply with food labeling regulations and to provide consumers with clear and accurate information.
 
5. Sterilization 
 
  • Thermal Sterilization: The filled and sealed containers are subjected to a sterilization process. High-temperature steam or hot water is used to kill harmful microorganisms such as bacteria, spores, and yeasts. The sterilization temperature and time depend on the size of the container and the type of packaging. For example, for small cups of porridge, the temperature might reach up to 121°C and the time could range from 15 - 30 minutes. This process ensures the safety and extended shelf life of the instant porridge.
  • Cooling: After sterilization, the products are cooled down rapidly to prevent overcooking and to maintain the quality of the porridge. The cooling process also helps to create a partial vacuum inside the container, which is beneficial for the shelf life and safety of the product.
 
6. Quality Control and Inspection 
 
  • Sampling: Throughout the production process, samples are taken at various stages. Samples are taken from the raw materials, during cooking, after homogenization, and from the final packaged product.
  • Testing: The samples are tested for multiple parameters such as nutritional content, texture, flavor, and microbiological safety. Any batches that do not meet the quality standards are rejected. This strict quality control ensures that consumers receive high-quality instant porridge.
 
7. Storage and Distribution 
 
  • Storage: The packaged instant porridge is stored in a cool, dry place, away from sunlight and strong odors. Temperature and humidity control is important to maintain the quality of the porridge over time.
  • Distribution: The porridge is then transported to supermarkets, convenience stores, and other retail outlets. For refrigerated instant porridge, cold chain logistics are necessary to preserve the freshness of the porridge until it is consumed.
